2015/2016 Winter Collection Reveal

Hi ya’ll! Can you believe it’s December? We here at Walker Farms are wondering where the year went, BUT we are super excited to reveal our 2015/2016 winter collection of Walker Farms Maple Syrup and Honey! As Christmas is upon us, don’t forget to order friends and family a local, delicious treat.

It’s Maple Sap Season!

Goodness is it cold in Southern Indiana! Multiple inches of snow, record lows, and negative degree wind chills have kept the wood stoves burning on Walker Farms.

It’s hard to believe just a few weeks ago, Mother Nature was blessing us with 40-60 degree days and sunshine galore. While taking advantage of those warmer days, we had the opportunity to tap around 175 Maple trees on the farm, with anywhere from one to three taps per tree depending on the trunk diameter. When the weather is ideal (mild and sunny), a tree can produce up to 10 gallons of sap per day beginning in early February lasting to Mid-March.

When asking our Walker Farms Maple Syrup aficionado about the tapping process, he explained, “A 1/4 inch hole is drilled in different vertical and horizontal locations on the tree trunk. The sap drains through a plastic tube, which then releases into plastic bags. (See image below with a young farm hand.) In the golden days, they used brass tubes and wooden buckets but those materials proved to be pricey in the modern age and buckets often hosted unwanted bugs.” (Raymond Walker)

The quantity ratio of sap to maple syrup is 50 to 1, meaning it takes 50 gallons of maple sap to produce 1 gallon of Walker Farms Maple Syrup. Happy New Year, Walker Farms friends and family! We are excited to announce our small batch, farm fresh Maple Syrup and Honey are in stock and both serve as great items to keep on hand for the cold winter months ahead.

Over the past few weeks, we have had excellent questions on our products and we would like to share with our readers in case you have a similar question.

Q. How much are your Walker Farms products?

A. Our 3/4 pound Honey is $15.00 and 12 oz Maple Syrup is $14.00. A custom made basket with one Honey, one Syrup, and Honey dipper is $38.00. Please note these prices do not include shipping.

Q. What is the quantity in each bottle? 

A. Our Honey product has a net weight of 3/4 pound and Maple Syrup a net weight of 12 oz..

Q. Do you ship products?

A. Yes! Please visit the ‘Order’ tab to place an order and specify shipping options.

Q. What if I want a quantity that is not available on the ‘Order’ tab?

Our farm is located in the rolling hills of Southern Indiana where we enjoy and take advantage of all four beautiful seasons. Harvesting and bottling small batch delicious maple syrup and honey is our speciality but we are always looking for new ways to make use of our land and share with others.
